You Better Watch Out, You Better Not . . . Run Out of Cookies!

I know that’s what’s already happening at my house. With or without them, of course, the meaning of Christmas and our joy in celebrating with friends and family remain the same. However, I’m figuring with just a week to go until Christmas Day and a little bit of time on my hands, I’d like to whip up just a few more treats for all the sweet teeth I expect over the next two weeks. I hope this one, a favorite among coconut lovers, comes in handy for you, too, as you enjoy this weekend of anticipation, fun and last minute prep. I may just have to make up another batch or two after the holidays to deliver to local booksellers along with a “thank you” for featuring The View From Prince Street when it reaches stores January 5th.

Coconut Sugar Cookies

3/4 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1-1/4 cups butter, room temperature
2 cups white sugar
2 eggs
1 teaspoon coconut extract
1 teaspoon lemon zest
1-2 cups shredded coconut

 

 

 

Preheat oven to 375 degrees. Sift together the flour, baking soda and salt. In a separate bowl, cream together butter and sugar. Add eggs one at a time. Mix in extract and zest. Mix half the dry ingredients into butter/sugar mixture. Blend well. Mix in second half of dry ingredients. Scoop dough into one inch rounds and them roll in shredded coconut. Bake on a parchment lined baking sheet for 9-10 minutes.

Chocolate Chip Cookies as You Like

Whenever I  make cookies for an event or just for the fun of it, I go to this recipe which I’ve used for years. The addition of the rum extract gives the chocolate an extra pop of flavor that I really enjoy. These are easy to make and I promise they’ll make you a superstar with the folks that try one.

Recipe–
1 cup of softened butter< ½ cup sugar 1-1/4 cup brown sugar 1 egg 1 egg yoke 1 teaspoon rum or rum extract 2-1/2 cups All Purpose Flour 1 teaspoon baking soda 1 teaspoon salt 1 cup large chocolate chips 1 cup small chocolate chips

Cream together the softened butter and sugars. Add the egg, egg yoke (it helps if they are room temperature) and the rum or rum extract. Sift together flour, baking soda and salt. Mix in chips. And if you would rather have nuts, swap out some of the chips. You can even add raisins or craisins. Scoop cookies onto a lined baking sheet and bake for 12-15 minutes.

Mary’s 2013 Holiday Recipes

Chocolate Truffles
8 ounces of semi-sweet or bittersweet chocolate
1/2 cup of heavy whipping cream
1 teaspoon of vanilla extract
Cocoa
Chopped walnuts
• Place heavy whipping cream in a saucepan and heat gently,
stirring often.
• When the cream is hot, pour over chocolate and add vanilla.
• Mix until the chocolate is melted and blended.
• Place chocolate/cream mixture in a shallow dish and refrigerate for
at least two hours.
• When the mixture is solidified, scoop out, form into bite size balls
and roll in cocoa and nuts.
• Chill. Serve. Enjoy!

Tex Mex Sugar Cookies
1-1/2 cups sugar
1 cup (2 sticks) butter
2 eggs
2 tablespoons whole milk
1 teaspoon lemon extract
3-1/4 cups flour
2-1/2 teaspoons baking powder
½ teaspoon salt
chili powder
sugar for dusting
• Cream together sugar and butter until light and fluffy.
• Add the eggs one at a time, milk and lemon extract. Mix well.
• In another bowl shift together flour, baking powder and salt.
• Slowly mix into butter/sugar mixture.
• Spoon even sized dollops on parchment-lined baking sheet.
• Sprinkle cookies with sugar and a hint of chili powder.
• Bake 350 degrees for 12-15 minutes.
This cookie is sweet and soft and has a real kick. The sweet and savory are a nice blend.

Bake to Satisfy Your Cravings!

What I love about this cookie recipe is that it can be customized to your tastes. Once you’ve mixed the basic dough, you can add in whatever flavor combinations appeal to you. Like chocolate? Make them chocolate chip cookies. Like maple and nuts exchange the vanilla extract for maple and add in toasted walnuts. Presto! You’ve got Maple Walnut Cookies. How about raisins and chopped almonds? Delicious! The combinations are endless and only limited by your taste buds.

My favorite combinations? I like chocolate but I go crazy for golden raisins and toasted pecans. Something that flavor combination that makes my day.

The Anything You Want Cookie

1-1/2 cups butter, melted
2 cups brown sugar
1 cup sugar
2 eggs
1 egg yoke
4 cups flour
1 teaspoon baking soda
1 teaspoon salt
2-3 cups of your favorite filling

Melt the butter in a microwave safe bowl and then mix in the sugars. Once blended add one egg at a time and then the yoke. In a separate bowl mix together flour, baking soda and salt. Mix dry ingredients into wet. When fully incorporated, add in your favorite filling. Bake in a 350-degree oven for 10-12 minutes.
