Pies of all kinds are Megan’s specialty and a favorite among the Spring House restoration team. First priority? It has to be delicious. Second? It has to be easy and quick to make. There’s not a whole lot of prep time to go around between a new baby on the way, the gutting of Spring House and trying to make sense of secrets from the past hidden among Samuel Jessup’s treasures. Creamy, sweet Buttermilk Pie fits the bill. Enjoy!
BUTTERMILK PIE
3 eggs
2/3 cup sugar
1/2 cup honey
1 cup buttermilk
1 teaspoon vanilla
1/2 teaspoon salt
1 prepared pie crust
Lay pie crust in a greased pan. Mix together the remaining ingredients and pour into the shell. Bake at 350 degrees for 35 to 40 minutes. Serve with fresh fruit or ice cream.
